Vegetable Cabbage Soup
serves 4
Ingredients
- 1 ea onion, chopped
- 2 ea carrots, chopped
- 2 stalks celery, chopped
- 1/2 t chili powder
- 15 oz white or cannelli beans, drained and rinsed
- 2 cl garlic, minced
- 1 t thyme leaves
- 4 C chicken or vegetable broth
- 2 C water
- 1/2 head cabbage, chopped
- 15 oz peeled plum tomatoes
- 1 pinch red pepper flakes
Instructions
- Saute the onion, carrots and celery in olive oil until soft. Stir in the chili powder, beans, garlic and thyme and cook until fragrant. Add the broth and water and bring to a simmer.
- Add the tomatoes and cabbage and simmer until the cabbage is wilted. Add the red pepper flakes, then season to taste.
- Plate and serve.
